Soaking beans is NOT something I usually remember to do or have time for, but when you love them as much as I do, it's easy to pivot and still have something delicious!

Awesome side dishes don't get enough love! And this one has so much flavor, is a great source of protein and Fiber, and will bring some of your best dishes together. OR, if you're really a fan of beans like I am, it can be your main dish! Get into it!
Heat olive oil in Medium Sauce pan over medium-high heat. Sautee all your vegetables for about 5 minutes until softened.
Add the beans, their juices, the butter and all your seasonings except bay leaf and vinegar and stir to combine.
Bring to a boil. Once boiling, lower the temperature to a simmer. Add the bay leaf and splash of vinegar, cover and cook for about 20 minutes, stirring occasionally.
Taste and season with salt and pepper!
Serve hot with rice or eat alone!
